Easy to Make Air fried Jalapeño poppers with Vegetable Soup

Soup
2 cups diced carrots
1 cup diced red pepper
3 ribs celery chopped
1/2 cup onion
1 cup pablano pepper
3/4 cup roasted corn salsa (from local market did have some cilantro and red onions in it.)
4 cups chopped spinach
4 cups spicy vegetable broth (just discovered this today 🙌🏻)
3 tsp better than bouillon roasted garlic
2 cans Trader Joe’s fire roasted tomatoes
Sautéed carrots, red pepper, onion, celery & poblano pepper with EVOO spray and salt for 7-8 min until tender. Added in corn and fire roasted tomatoes. In a mixing bowl add bouillon and broth and whisk until dissolved. Add to soup. Bring to a boil and then reduce for 45 min. Add in chopped spinach and cook for another 5 min. Yields 6 servings and it is so flavorful and you get 2 pts back.
Jalapeño poppers (2pts)
2 laughing cow wedges
1 large clove of garlic minced
Pinch of salt
Mix together and add into jalapeño half’s( remove seeds)
Air fry 12-15min @ 370
