Air Fryer Butternut Pumpkin Soup

According to Lizzie Imagine her delight when she discovered she could fit entire halves of butternut pumpkin in the airfryer!
She personally loved scooping the pumpkin but maybe y’all would prefer to cut it up & peel…
The soup is butternut pumpkin, cubed potatoes, caramelized onion & cream! For “spices”, nutmeg, salt & pepper… you can add garlic too!

Air Fryer Butternut Pumpkin Soup
Ingredients
Small shell pasta
1 butternut pumpkin
2 cups diced onion
4 medium sized potatoes
1/4 cup butter
Nutmeg, Salt, Pepper, sugar
Directions:
First I oiled & salted the pumpkin and then put it in the airfryer for 1hr 20min on the “bake” setting.
While that was cooking, I caramelized the onions for an hour on stove, lowest heat possible… I like them pretty crispy so they’re extra tasty, I added a level tablespoon of sugar to the onions to help the caramelization
The potatoes diced small took 20 minutes to cook until they were super soft
I used a stick blender to blend the pumpkin, onions & butter until they were very smooth, and then added nutmeg, salt & pepper to my tastes
Then throw in pasta & the potatoes! I didn’t wanna blend the potato cause the soup needed extra chunkiness to it.
Notes: You can add cream to the soup once it’s done!
