Asian Inspired Crispy Air Fried Tofu with Stir Fry vegetables

Whether you just got an air fryer or you love tofu this is the recipe for you! 

This recipe is very versatile. I have put the tasty tofu cubes on salads, into soups, in wraps and added to stir fry veggies (as depicted here).

Weight Watchers Points of course will vary depending on what you decide to use them with.

But, prepared by themselves the entire recipe is only four (4) points on WW Blue. They are even good as a little appetizer. Just stick a toothpick in the crispy cubes and dip into a little soy and ginger sauce! 😊 Enjoy.

This recipe Asian Inspired Crispy Air Fried Tofu with Stir Fry vegetables makes two servings -each serving is two points on Weight Watchers blue! 

Asian Inspired Crispy Air Fried Tofu with vegetables

Keep reading for the recipe!

Ingredients:
1. Block of extra firm tofu pressed* and cut into equal sized cubes (about one inch).
2. Two(2) tablespoons low sodium soy sauce (regular OK too).
3. One(1) teaspoon rice vinegar
4. Two (2) teaspoons sesame oil. ▶️3 points
5. One (1) tablespoon corn starch. ▶️1 point

Instructions:
• Whisk the soy sauce, vinegar and oil together until blended.
• Pour over the cubed tofu and toss until coated.
• Set aside in the fridge for about 30 minutes to marinade. You can even cover and leave overnight.
• Once sufficiently marinated toss them evenly with the corn starch.
• Place the cubes in the basket of your air fryer. Make sure they are in a single layer and not on top of one another.
• Cook on 375 for 10 minutes, flip and cook another 10 minutes. As you know all air fryers are different so look for a golden brown and adjust to your liking.

Once done add the Asian Inspired Crispy Air Fried Tofu to your vegetable medley!

This entire recipe is four points -or two points per serving on Weight Watchers blue. 

*Handy tip! I have found that the cast iron press I use on my grill also works great for pressing out the liquid from the tofu. I just put the press in a plastic bag before I put it on top of the tofu block which I’ve put in between paper towels. It works great and I get double duty out of this kitchen gadget. The plastic bag keeps it clean & sanitary.
