Baked Cauliflower Mini Muffin Tots
What I love about these Baked Cauliflower Mini Muffin Tots is that not only are they super delicious but they are healthy! Thanks to Ellen for this seriously yummy recipe that will delight parents and kids alike!
You really think that you’re eating tater tots. For this recipe These are baked in the oven but they can be reheated in the air fryer on subsequent days which will make them very crispy!
The even better news is 6 tots is a serving on Weight Watcher Blue. So this recipe makes 4 servings at a little under 3 points per serving on WW blue program. yes you read that right: These Baked Cauliflower Mini Muffin Tots are three points for six tots on WW BLUE!

Ingredients:
*12 ounce bag riced cauliflower
(defrosted and squeezed dry!)
*3/4 cup shredded low-fat cheese
(use what you like) Points vary
The cheese pictured is 9 points for that serving.
*1 egg
*1/4 cup ground oats ( 2 points)
*1 small onion chopped
*1 tsp kosher salt
*few grinds black pepper
*1/2 tsp tumeric
Directions:
Preheat oven to 400 degrees
Spray a mini muffin tin with cooking oil (make sure to get the sides too )
1. Sauté chopped onion with a few sprays of oil and let cool.
2. Combine all of the ingredients and the cooled onions together in a bowl. I like to use a fork.
3. Using a scoop or spoon divide the mixture between the (24) muffin cups and press down firmly into the cups.
4. Bake at 400 degrees for 20-25 mins or until golden brown.
5. Allow to cool slightly and run a knife along the edges to loosen before popping out.

▪️These little tots taste so delicious and almost like a little potato knish. I love having them with some mustard. ◾️Make sure to firmly squeeze out all the liquid from your cauliflower rice. The dryer it is the crispier the little tot will be.◾️If you want to substitute breadcrumbs, cornmeal or Panko instead of ground oats that will work also. Just calculate the points.◾️These are excellent to reheat in the air fryer as they will crisp up beautifully.◾️ Remember 6 tots is a serving.
