Black bean veggie egg bowl
This is so delicious. And at only 1 weight watchers point the only thing to make this egg, veggie, black bean and cheese bowl better is the coffee y’all can’t see!!!

Black bean veggie egg bowl
Ingredients and directions
Garlic
1/2 onion
cooking spray
roma tomato
spinach
1/2 cup black beans
2 eggs
1/4 cup fat free shredded cheddar cheese
Instructions
I just mice garlic and chop up onion and peppers spray cooking spray and heat up the veggie mixture in the skillet. I Added a 1/2 cup serving of canned black beans. Cut up a Roma tomato and add it. A couple handfuls of fresh (or frozen ) spinach.
Cook it until peppers and onions were cooked and spinach wilted. Added a bit of lime juice with salt. Made a space for the 2 eggs in the skillet and topped with a serving of cheese. made sure everything was cooked. I also love garlic so I also added some garlic salt but that may not be everyone’s taste.
Notes: I don’t tend to measure veggies as they’re zero points. I used frozen veggies so I just did a handful and a half. I put a lot of spinach because I try to bulk my meals with veggies and especially greens. I did a 1/2 cup of black beans (a serving per the can) and I used great value shredded fat free mild cheddar cheese at 1 point for the serving of 1/4 cup.
