Breakfast Crumble Pan-Cake

Breakfast Crumble Pan-Cake
¾ cup of High Protein Pancake mix, I use Kodiak Buttermilk plus 2 tbsps for crumble
1 tsp baking powder
Pinch of salt
2 large eggs
¾ cup Non fat plain Greek yogurt, I use Fage
2 tbsp of SF Maple Syrup, plus 1 tbsp for crumble
1 tsp Vanilla extract
1/3 cup fresh or frozen blueberries (if frozen rinse with water)
3 Tbsp of Sweetener, I use Lakanto Monkfruit
Instructions
to make the Crumble: small bowl – Mix 2 tbsps. oats, 2 tbsp Kodiak mix, 1 tbsp of syrup until incorporated.
to make the cake : Preheat oven 350 degrees, grease a 9” round cake pan.
Combine ¾ cup pancake mix, powder, salt in a medium bowl, set aside. Whisk remaining ingredients except blueberries in a separate bowl.
Add dry to wet, whisk until combined, fold in blueberries, transfer to pan. Bake 18-20 minutes. Sprinkle with crumble and bake an additional 8-10 minutes. Let cool. Serve from same pan or you can try to remove it to a serving plate. it will be much easier to remove if you slice and eat a piece first 😉
Top with fruit, add maple syrup – delicious add low point sweet for breakfast or dessert. Hubby had 2 pieces 🙂
