This cozy, Cauliflower Mac and cheese  comfort food favorite has everything you’d hope for in a great macaroni and cheese recipe, plus even more.

Cauliflower Mac and cheese

It’s creamy, loaded with flavor, and baked to marry all the flavors and textures. The bonus is cauliflower to the mac-and-cheese mix.

It is satisfying, and low in weight watchers points! recipe makes four servings! each serving is two points

Ingredients:

  • 1 medium head cauliflower, cut into florets
  • 1 cup fat free shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  •  1/4 cup plain non-fat Greek yogurt
  • 1/4 cup unsweetened almond milk
  •  1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp smoked paprika (optional)
  • Salt and pepper, to taste

Directions:

1. Prepare Cauliflower
• Bring a large pot of salted water to a boil.
• Add cauliflower florets and cook for about 8–10 minutes until tender. Drain and set aside.

2. Make the Cheese Sauce
• In a saucepan over low heat, combine almond milk, cheddar cheese, Parmesan cheese, garlic powder, onion powder, and smoked paprika. Stir constantly until the cheese melts and the sauce is smooth.
• Remove from heat and stir in Greek yogurt until creamy. Adjust seasoning with salt and pepper.

3. Combine and Bake (Optional)
• Preheat your oven to 375°F (190°C).
• Place the cooked cauliflower in a baking dish and pour the cheese sauce over it. Mix gently to coat.

4. Bake
• Bake for 15–20 minutes, or until the top is golden and bubbly.

5. Serve and Enjoy
• Divide into servings and enjoy your low-point dish!

  • Cheeses: Adjust based on your plan, but typically around 2–3 points per serving if using reduced-fat options.
