Chocolate Pudding Muffins

I am so proud of myself!! I combined two recipes and got these delicious beauties!! Two points!! I call them Chocolate Pudding Muffins.
Here is the recipe. Remember, it’s a combination of two recipes.
First create the pudding mixture:
6 pitted dates (soak them in water for 10 minutes, squeeze out excess liquid, discard soaking liquid)
5 large bananas
1 cup of Monk Fruit Sweetner
1pkg (14oz) Extra firm tofu (drained)
Half cup of unsweetened cocoa powder
1/4 tsp cinnamon
1TBSP vanilla extract
Mix all ingredients in a food processor until smooth
Muffin mixture:
3 cups of Kodiak Cakes Chocolate Chip Flapjack and Waffle Mix
1/2 cup of unsweetened applesauce
1can diet seven-up
Mix in blender until smooth
Use an ice cream scooper to fill 26 muffins tins half way with the muffin mixture.
Then use the ice cream scooper to completely fill the 26 muffin tins with the pudding mixture.
Put in oven at 375 for 30 minutes. You can top with Fat Free Reddi Whip or Cool Whip. Good Luck!
