Cinnamon Rolls
Makes 14
3💛each w/Glaze
2💛 each without Glaze & Dusted with Powdered Sugar
Dough:
1 tsp of Bread Machine Yeast
1 egg
2 tsp of Ground Cinnamon
¾ Cup of Unsweetened Applesauce
1 cup Whole Wheat Flour
1 Cup Self-Rising Flour
1 tsp of Orange Zest
6 tsp of Sugar
1 tsp Orange Extract
Grease a large glass bowl.
Add all ingredients to a mixing bowl I use a stand mixer with a dough hook, or a hand mixer with dough hooks.
Mix about 10 minutes until a dough ball has formed and is tacky to the touch. Transfer it to your greased glass bowl, flip, so top and bottom are greased, cover and let it rest for 2 hrs.
Filling: Add to a saucepan on medium heat
3 Cups of Fresh cranberries
¼ cup of Sweetener
2 tsp of Cinnamon
¼ cup of Fresh squeezed orange juice, add some orange flesh as well.
Continue cooking until a jam consistency and most of the cranberries are broken down.
Remove from heat and set aside.
Transfer dough ball to a lightly floured surface, and roll out to a 12×14 rectangle, spread your cooled filling evenly, then roll from long side to long side, cut into 14 equal pieces and place in greased baking dish. Cover and let rise again for an hour.
Bake 350 degrees for 25 minutes, remove from oven and let cool for 20 minutes.
Glaze – Mix 6 tbsps. of powdered sugar with 3 tsps. of orange juice, add some zest and drizzle over room temperature rolls. I also dusted with powdered sugar.
Can be frozen, microwave when ready to eat.
