You know when you envision something in your head and it ACTUALLY turns out to be a delicious success?
Well The Happy Vitamina was brainstorming the other day when I was craving cheesecake (TBH I am not a fan of the zero Point Cheesecake – too plain). Enter Cinnamon Swirl Cheesecake Cups! Unlike the zero point cheese cake this recipe has a crust and flavoring in the filling all for 125 calories each. And let’s be honest, cupcakes are cuter anyway. 🧁

Cinnamon Swirl Cheesecake Cupcakes
What You’ll Need
Crust: 96 pepperidge farm Vanilla Cupcake Goldfish Grams, 2tbsp Plan Nonfat Greek Yogurt
Fillings
3 C Plan Non-Fat Greek Yogurt
3 Eggs
1 Box Instant SF/FF Pudding Mix (Vanilla or Cheesecake)
3 tbsp Cinnamon Brown Sugar(I used cinnamon mixed with @swervesweetie brown sugar replacement)
2 tbsp Confectioners Sugar Replacement (I used Swerve)
1 tbsp Vanilla Extract
Toppings: 1 tb Cinnamon Brown Sugar Blend, FF Whipped Topping, 12 Goldfish Grahams
What To Do
– Set oven to 375
– Start making your crust by first mashing the Goldfish Grahams into small crumbs (you can also use a food processer) before adding in the yogurt and blending in
– Once you’ve blended it’s time to assemble the crust! Distribute the crust mix evenly into 12 cupcake cups (make sure you either have a mold or wrappers). Make sure to press the crust down so it molds together. Bake in the oven for 5 minutes
– While the crust is baking, mix together all your filling ingredients until blended evenly.
– Once your crust is done, take out and fill cupcakes evenly with filling
– Bake for 23-25 minutes
– Let cupcakes cool before placing in the fridge overnight
– Add your toppings and enjoy!
