According to Juliette If you’re on Tiktok, you know @brialem (if not, get on it), in which case you know about cowboy caviar.
If you’re not, basically Bria is obsessed this bean/corn “dip” and makes all different versions and it always looks delicious!
Juliette decided to make her own version and keep it low point, but there are a million ways you can run with this recipe and Juliette encourages you to check out Bria’s videos and see the different things she’s incorporates (ex: mangos 🥭 which Juliette wanted to include but none were ripe at her grocery store).
Anyways here is Juliette made it!
Cowboy Caviar
Base:
– 1 can black beans
– 1 can corn
– 1 diced red bell pepper
– 1/3 diced red onion
– 1/2 diced jalapeño (no seeds)
– 32g @traderjoes hot and sweet jalapeños chopped up
Dressing:
– juice of 2 limes
– splash of water
– red wine vinegar (I didn’t measure but start slow and you can always add more to taste)
– 1 tsp @skinnymixes simple syrup (you could also make your own with any sweetener)
-1 tsp taco seasoning
The just pour the dressing right on! Juliette added guacamole and feta and used these trader joe’s crunchy crisps for dipping!
It came out to 5 servings for 1 point per serving on my personal @ww plan.
For reference, Juliette has zero point beans but does not have zero point corn.
