Prepare the mixture of onion, eggs, seasonings, several hours ahead or the night before.
Cover and refrigerate, but leave it out at room temperature about 30 minutes before cooking so it can warm up enough to keep the baking time the same. Serve with a mixed green salad or bowl of vegetable soup.
Ingredients
- 2 bell peppers sliced
- 1 onion sliced
- four large eggs
- 2 tablespoons of Kodiak protein pancake mix cooking spray
- salt and pepper.

Instructions
I cut bell peppers and onions sautéed then beat four eggs and added 2 tablespoons of Kodiak protein pancake mix.

Cooked for about five minutes then I put a plate on top of the pan so I could flip it and then put it back on for another four minute.
It’s actually really good. You can season it however you want it. I just use salt and pepper.
