This is one gorgeous Crustless Veggie Quiche

Crustless Veggie Quiche

This Veggie Quiche is baked in a 9×13 pan, makes 6 servings and is 3 weight watchers points per serving.

Ingredients

Egg(s)
10 item(s) (large),

Kroger Lowfat cottage cheese 1cup(s)

Kroger Reduced fat 4 cheese Mexican blend finely shredded cheese
3/4 cup(s)

Cooked spinach
1 1/2 cup(s)

Cooked zucchini 1cup(s)

Cooked tomato(es)
1/2 cup(s)

Jalapeno pepper(s)
1/4 cup(s)

Garlic
2 medium clove(s)

Fresh Selections Sliced baby bella mushrooms
3 oz, Cooked

Add anything you want. I precooked all veggies and removed inner parts of tomatoes to avoid getting too watery, I’m not sure that is necessary but it turned out perfectly.

Bake at 350 degrees F for 35 minutes.
I took a pic of quiche before adding the cheese and sautéed mushrooms just because it was so pretty. Enjoy!
