So of course I was thrilled when she graciously allowed me to share her recipe which looks as good as it tastes! How great is it that we can all enjoy muffins on the Weight Watchers plan! This recipe is for those of you on green! Keep reading for all the details!
DOUBLE BERRY LEMON MUFFINS -Two points each on Weight Watchers Green
Ingredients:
* 1/3 cup oatmeal
* 1-1/2 cups all purpose flour
* 2 Tbl sugar substitute
* 2 tsp baking powder
Sift dry ingredients into a mixing bowl. Add and mix well:
* 1/2 cup unsweetened almond milk
* 1/4 cup unsweetened applesauce
* 1 egg
* Zest of one lemon
* Juice of one lemon
Directions:
Preheat oven to 350° and spray muffin tin or silicone muffin cups.
Fold in 2/3 cup each frozen or fresh raspberries and blueberries. Evenly distribute better among 12 muffin cups. Bake 25-30 minutes. Cool 5-10 minutes before unmolding. Cool completely on wire rack. Store in fridge.
Makes 12 servings

These look amazing! Do you know the calorie count for those of us that are counting calories instead of points??
These had the potential to be delicious. I will make again but am adding in another T of sugar substitute. They were not sweet and a little bitter from the baking powder.
Can I use the steel cut oatmeal and can I use Gluten Free Flour? Thank you.
gluten free flour should be no problem, but steel cut oats likely won’t work. Rolled oats would.
I wonder if almond flour would work here? I may try that.
