Easy Sheet Pan Roasted Vegetables

Easy Sheet Pan Roasted Vegetables

This is an easy dinner using one sheet pan . The roasted vegetables are smoky and sweet, and by adding feta cheese (it can be plant based), the flavors melt together, creating a delicious combination.

Easy Sheet Pan Roasted Vegetables

Ingredients

1 red onion, sliced
3 bell pepper, cut in halves
2 zucchini, sliced
16 cherry tomatoes
Scallions
2 cloves of garlic
1 lemon, sliced
1/2 cup olive oil
1 tsp onion powder
1 tsp oregano
1 block of feta cheese

salt and black pepper to taste

Method

In a large bowl, mix all the vegetables with the olive oil and seasoning.

Preheat oven to 375°F. On a large sheet pan, lay the vegetables flat and add pieces of the feta cheese in between the veggies. Roast, uncovered for 15-20 minutes until the vegetables start  to crisp.

Reduce the heat to 350°F and continue cooking until the feta  is melted and the vegetables are tender .

Serve warm. Enjoy!
