Easy to Make Just ONE POINT Weight Watchers Breakfast Muffins recipe!
Ingredients
2 MorningStar Farms Grillers Original veggie burgers 5 Points
4 eggs 0 Points
1 shallot 0 Points
1 1⁄2 cup sweet red and yellow peppers 0 Points
1⁄2 cup fresh cherry tomatoes 0 Points
1⁄3 second Nonstick Cooking Spray, Canola Oil 0 Points
1 onion 0 points
Instructions
Preheat oven to 350 degrees.
Spray a muffin tin with non-stick spray.
Spray a large non-stick skillet with non-stick spray.
On medium heat cook ground morningstar farm burgers. Stir in diced bell pepper and Cherry tomatoes and onions and shallots.
In a large bowl, beat eggs and together until well mixed and fluffy (2-3 minutes). Spoon veggie burgers into the muffin tins spreading equally between each muffin tin.
Pour egg mixture over the burgers filling ¾ of the way full.
Bake at 350 degrees for 30 minutes.
