This Easy Vegetable Stir Fry is DELISH.
I know many of you want protein that tastes like meat- and I get it- I do- I was a once a week steak girl back in the day and ate chicken like my plane was going down every single night. (But this Easy Vegetable Stir Fry has me leaving meat and chicken in the dust but I digress).
While I have recently cut all meat from my diet AND MOST RECENTLY I HAVE GONE vegan with recipes like this Easy Vegetable Stir Fry–it’s a bit harder to convince my FRIENDS to follow suit- so I am always looking for alternatives to counter their arguments about “those Soy products don’t taste good”.
And let me tell you- all you I CAN’T and I won’t GIVE UP MY BACON naysayers– after trying my Vegan recipes you might JUST have second thoughts about biting into that nitrate laden sausage.
And this recipe for Easy Vegetable Stir Fry is a perfect Vegan side dish for the holidays and zero points on weight watchers!
Ingredients
Veggies of choice: I used carrots, snow peas, green beans, and mushrooms
Soy sauce
Seasonings: I used crushed red pepper and garlic
Optional: 1/8 cup peanuts
Points Breakdown: This is a zero point recipe unless you add the optional peanuts. Peanuts are 3 points for 1/8 cup according to the Weight Watchers app ( if you add it to the recipe it makes each serving one point)



The Directions to whipping up this delish dish are EASY!
Combine ingredients over medium heat and cook until they’re to your preferred tenderness.

It looks as though your carrots were cooked before they were stirfried… Is this correct? I would think the snow peas and mushrooms would be overdone if you cook everything from raw together.
