My husband desperately wanted a son. Of course he never admitted it- and once we had our daughter he even said he couldn't see himself as a father to anyone but a girl. But that's the thing about parenthood- it stretches your heart in ways that are hard to articulate. It changes your perception of who you are and all the preconceived notions you had about yourself.
Of course when we had our son- I know my husband was secretly expecting a sidekick in all things sports. Unfortunately for my husband- my son showed ZERO interest in anything even mildly sports-related. We never pushed or prodded him and indulged his interests in comics, drawing and piano while my husband was happily resigned to watching Sunday football on his own.
But when my son turned seven – and he began to HIT THE BALL instead of running away from it while playing his little league team- he started to ask my husband questions about his favorite teams. His interest began quite organically-and after a summer of playing touch football and basketball – his love of sports was cemented. (OF COURSE MY HUSBAND COULD NOT BE HAPPIER to finally have a sports buddy).
And this love of sports extends to spectator sports- and usually on a Sunday my husband and son can be found side by side glued to each other and the FOOTBALL GAME DU JOUR! Game Day Vegetarian Chili and Krusteaz Cornbread Muffin Recipe
Ingredients for muffins:
2/3 cup milk
1/3 cup vegetable oil
1 egg
Directions: Game Day Vegetarian Chili and Krusteaz Cornbread Muffin Recipe
1) Preheat oven to 375 degrees
2) Mix together oil, milk, egg and full box of Krusteaz Honey Cornbread Mix
3) Spray tin with oil and pour into muffin tray
4) Bake for 14-16 minutes or until light brown
Ingredients for vegetarian chili:
1 medium onion
1 green pepper
16 oz of extra firm tofu
1/3-1/4 cup chili powder
28 oz can whole peeled tomatoes
16 0z box of frozen mixed vegetables
8 oz dried mixed beans
Directions: Game Day Vegetarian Chili and Krusteaz Cornbread Muffin Recipe
1) Heat beans until cooked through and set aside
2) Cut tofu into 36 even squares
3) Brown tofu and set aside
4) Cut onion and pepper into small slices and sautee until soft
5) Add in tomatoes, tofu and chili powder and cook over medium heat for 30 minutes
6) Add in frozen vegetables for 5-19 minutes and then add cooked beans for 3-5 minutes
7) Serve over rice with cornbread muffins
