This Gazpacho Soup for the Soul will cure whatever ails you
You want to know something about me? I hate ketchup. I can't stand the sight of it. The look of it and the thought of it being anywhere near the food I will consume. And when I was a kid this disdain for ketchup led to my inability to eat a tomato. I would literally gag when my mother tried to serve it to me in any form.
Fast forward to when I was pregnant with my daughter and all I wanted to do was eat raw tomatoes by the bowful seasoned with salt. I couldn't get enough tomatoes down my gullet! And ever since that pregnancy I have been obsessed with tomatoes in all forms- sauces, chili, salads and yes now as the main attraction in this Gazpacho Soup for the Soul!
The best part about this Gazpacho Soup for the Soul is that it is not only uper healthy for you and vegan but if you are a Weight Watchers blue fan it is just two points per very hefty serving! And let me tell you- this soup is not only delicious but it is super filling!
Gazpacho Soul for the Soul
3 cups canned tomato juice 5 points
3 tbsp canola oil 12 points
3 large tomatoes chopped 0 points
1 cucumber peeled and seeded 0 points
1 small onion, cut up 0 points
1 small green pepper, cut up 0 points
1 garlic clove
1 tsp sugar
¾ tsp salt
½ tsp hot pepper sauce
Blend all ingredients, one third at a time, until finely chopped, pour into a bowl, cover and chill.

This Gazpacho Soup for the soul is two points per serving on Weight watchers blue. Each serving is about one and half cups and the entire recipe makes eight servings.

- 3 cups canned tomato juice 5 points

Chop up all ingredients.
place veggies in the blender.
Add in the spices and tomato juice.
Blend all the ingredients half a bowl at a time until finely chopped.
Pour into a bowl, cover and chill.
