Glazed Cinnamon Pancake Rolls

Makes 12
Directions:
Heat oven to 350F degrees, grease a glass dish, I used a 9” pie dish.
2 ½ cups of High Protein Pancake Mix, I used Kodiak Buttermilk
3 tsp. Ground Cinnamon
4 tbsp of brown sugar
1 large Egg
2 Tbsp of Baking Powder
1 Cup of Plain Fat Free Greek Yogurt
¼ cup of water
Directions:
In a large bowl, add your pancake mix, baking powder, and 1 tsp of cinnamon, whisk together until well combined. Add Yogurt, egg, and ¼ cup of water. Mix until ball dough forms.
On a lightly floured surface roll out your dough ¼” thick about 16” long.
Mix 2 tsp. of cinnamon with the brown sugar and spread over top of dough.
Beginning at the long end, carefully and slowly tightly, roll to the opposite side.
I cut the log in half, then half again, each of the 4 smaller logs cut into 3rds.
Place in your prepared baking dish, Bake for 20-25 minutes. Once cooled, mix 3tbsp of powdered sugar https://amzn.to/3eFNeVlwith 1 ½ tsp of water and drizzle over rolls. I covered dish with plastic wrap left on the counter & reheated in microwave. If you refrigerate, let them come to room temp before microwaving.
