Green goddess veggie frittata

One point per serving on Weight Watchers Blue! Entire recipe serves four

Servings 4

Ingredients

  • •6 eggs 0 smart points on blue
  • •container of garden veggies Trader Joe's Garden vegetable hash 1 smart points on blue
  • •1/4 cup or 2 oz. of lite mozz cheese Trader Joe's Lite low-moisture part skim mozzarella cheese 2 smart points on blue
  • •2 tbsp Trader Joe's Green goddess salad dressing 1 smart point on blue

Instructions

  1. •sauté veggies
  2. •meanwhile, in bowl, scramble eggs and add dressing. Mix well
  3. •pour eggs over veggies
  4. •cover with cheese
  5. •put lid over pan and let cook until eggs set (mine took 10 minutes)
  6. •garnish with cracked pepper and parsley
