Hash brown cheese bites

These hash brown cheese bites are so scrumptious.  At just 1 weight watchers point each they are also low in points but also pack in some protein.

The entire recipe makes 24 bites.

These frozen shredded hash brown potatoes, and pre-shredded cheese make the prep a breeze. We love how sturdy they are too! 

Refrigerate the bites for up to five days.  You can reheat for 45 seconds to 1 minute in the microwave; or freeze for longer storage.

Bites can be thawed overnight in the fridge, and reheated for the same amount of time.


Ingredients:

4 cups frozen shredded hash brown potatoes (no oil added, plain)
1 cup nonfat Greek yogurt
1 cup self-rising flour
1 cup fat-free shredded cheddar cheese
1/2 tsp garlic powder (optional)
1/2 tsp onion powder (optional)
Salt and pepper (to taste)
Cooking spray (light mist, optional)

Instructions:

  1. Set the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly mist it with cooking spray.
  2. In a large mixing bowl, combine the shredded hash browns, nonfat Greek yogurt, self-rising flour, shredded cheddar cheese, garlic powder, and onion powder.
  3. Using a small scoop or your hands, shape the mixture into balls about 1 ½ inches in size.
  4. Place them on the prepared baking sheet.
  5. Bake for 20 to 25 minutes, or until the bites are golden brown and fully cooked.
  6. Allow to cool slightly, and enjoy these low-point, crispy bites!

You can change up the recipe and add vegetables in this meal.

Include whatever mix you’d like, such as broccoli florets, diced eggplant, sliced parsnips, and fresh or frozen corn kernels

Sprinkle the top of each bite with some additional chopped fresh thyme for a bit of added color.
