Hearts of Palm Spaghetti with Tomato sauce

Hearts of Palm Spaghetti with Tomato sauce
Hearts of palm pasta sautéed with tomatoes
Found this at Trader Joe’s and thought I would share.

I made it for lunch, but you can also make it for dinner and add some protein. Zero points. I didn’t have fresh tomatoes so I used half a can of diced and added some salt and pepper.

Notes I find that boiling it like regular pasta (after rinsing the heck out of it), it softens up the texture a bit. Some say to actually pan fry it to soften it up-

Ingredients

9 ounce box of hearts of palm spaghetti pasta
can of diced tomatoes
cooking spray

Instructions

boil it like regular pasta (after rinsing the heck out of it), sprayed my pan with cooking spray and sautéed the pasta with tomatoes!
