The beauty of this recipe is that Everything goes into the blender… It’s so easy! They’re tasty and low in points. One regular sized muffin is just 2 points on Weight Watchers Green. Makes 12 muffins.
Nothing is off limits on WW. That’s the beauty of the plan. If you just weigh and measure your food or ingredients when cooking you can make sure you stay within your daily points.

Hungry Girl’s Banana Walnut Blender Muffins – Two points per Muffin on Weight Watchers Green
Ingredients:
2 cups oatmeal
3 ripened bananas
1/2 cup liquid egg whites
1 cup non-fat yogurt
1/4 cup unsweetened almond milk
1 and 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1 tsp vanilla extract
1/4 tsp salt
1/4 cup Sukrin (brown sugar substitute)
36 grams chopped walnuts
Directions:
1.Spray muffin tin or 12 silicone cups with non-stick cooking spray.
2. Preheat oven to 400 degrees
3. Add oatmeal to blender and pulse till it is the consistency of course flour
4. Add 3 ripened bananas to the blender
5. Add ½ cup liquid egg whites
6. Add non-fat greek yogurt
7. Add ¼ cup unsweetened almond milk
8. Add 1 ½ teaspoons baking powder
9. Add ½ teaspoon baking soda
10. Add 1 tsp cinnamon
11. Add 1 tsp vanilla extract
12. Pinch of salt ¼ teaspoon
13 ¼ cup brown sugar substitute, ex: sukrin gold
14 Blend on high speed until uniform, stopping and starting as needed
15. Scrape sides of blender
16. Crush with ladle or rolling pin 36 grams of walnuts. Add half to batter and set aside the other half
17. Equally distribute batter to muffin cups and top walnuts on each muffin and press lightly into muffins
18. Bake for 16-18 minutes and cook until toothpick inserted comes out clean
19. Cool on a wire rack.
