Keto Chocolate Chip Cookies

The holidays have been a whirlwind of emotion for me. Thank goodness there are Keto Chocolate Chip Cookies to soften the hard egdes ( more on the recipe soon!)

 

Keto Chocolate Chip Cookies

All you need are four ingredients and you will satisfy that cookie craving! 

Keto Chocolate Chip Cookies

Ingredients:

1/2 cup natural creamy peanut butter unsweetened
1/3 cup erythritol granular
1 large egg
1/3 cup low carb milk chocolate chips

Directions: 

1. Preheat oven to 350 F. Line a large baking sheet with a silicone baking mat.
2. In a large bowl, add peanut butter, erythritol butter and egg. Stir until all ingredients are mixed and a dough forms.
3. Stir in half of the chocolate chips.
4. Using a 1.5 tbsp cookie scoop, scoop up cookie dough and place dough balls onto prepared cookie sheets, spaced about 1 1/2 inches apart.
5. Add a few of the remaining chocolate chips on the surface of each cookie ball. Press down each dough ball with the palm of your hand so that it becomes a thick round disk.

6. Cook 11 minutes. Recipe Makes 15 cookies. These cookies are crispy on the outside and soft on the inside!
