Weight Watchers Carrot Cake Recipe

I don’t know about your kids but when mine come home after a long day of doing anything they are FAMISHED.  And this Weight Watchers Carrot Cake is always a big hit with them and the kind of snack that will tide them over until dinner!

Weight Watchers Carrot Cake Recipe

What I love about this Weight Watchers Carrot Cake,  is that I can enjoy the snack with them as well.  With only 5 Points per serving, I can feel okay about indulging in this if it fits into my daily points.  The other great part about sitting down and sharing a snack with my kids is that it provides the perfect opportunity for us to have a conversation sans electronics and one that feels organic as opposed to me pumping them for information about their day.

Ingredients

10 serving(s), 1/12 package(s)  Duncan Hines Decadent Cake mix, classic carrot 91 points 
1⁄4cup(s) unsweetened applesauce 0 points
3⁄4cup(s) water 0 points
2 egg(s) 0 points
5 sprays Non-Stick Cooking Spray 0 points 
 

Directions for Weight Watchers Carrot Cake

Below you will find my step by step picture tutorial and guide to making this delicious and easy recipe point friendly!

Preheat the oven to 375 degrees as directed on cake mix box (may vary depending on darkness of pan used)
 
In a large mixing bowl, combine the dry cake mix, applesauce, and water.
 
Mix until well combined.
 
Pour the batter into the already sprayed (with non-stick spray), cake pan 
 
Bake for about 30 minutes at 375 degrees or until a toothpick inserted in the center comes out clean. The carrot cake will be light and fluffy.

I do not frost my cake, but you can add a bit of whipped topping for 1 point if desired. I individually wrap each slice in wax paper so that I don’t over indulge!

Makes 18 pieces

Serving and Storing the Weight Watchers Carrot Cake

Since this is a moist cake, I prefer to store this in an airtight container in the refrigerator until ready to be eaten.  If you prefer a warm cake, you can simply pop it into the microwave for a few seconds.  If not, it is perfectly delicious straight from the container.

For additional points, you can add in chopped walnuts, or top with whipped topping or whipped cream.  Just remember to account for those in your daily points allowance.
