Noodle Free Lasagna

Many people ask what is a good substitution for pasta and it is Egg life wraps. They are spongy so I roll the out first to make them dense. Then you can use them whole for lasagna noodles or slice them into strips and use them as fettuccine or spaghetti.

We made this lasagna using the Egg Life wrappers for noodles. Will definitely make it again! 6 servings at 3 points each for a huge serving.

thanks to Susan

Ingredients for noodle free lasagna

  • 6 Original egg white wraps
  • 1½ cup Harris Teeter Fat free ricotta cheese (or any other fat-free variety you like best)
  • 24 ounces of Ragu Simply Traditional Pasta Sauce, No Sugar Added
  • 1 cup Great Value Fat free shredded mozzarella cheese

Check out my Weight Watchers shopping list here.

Instructions

  • Preheat oven to 375
  • Cut egg wrapper into strips to fit the baking dish, layer sauce, noodles, ricotta, mozzarella and repeat until all ingredients have been used.
  • Bake covered for 50 minutes, then remove from oven top with Mozarella and bake 10 more minutes. Remove from oven.
  • Let rest 5-10 minutes. Cut in six servings

You can also just use the wraps up make pasta! After you slice the egg wraps into thin strips sauté them in a bit of olive oil spray and garlic powder for 2-3 minutes.

Have with your favorite low carb sauce.
