Orange Date Muffins

Orange Date Muffins — these are so scrumptious!!

This recipe Makes 9 muffins – 2 weight watchers points each

Orange Date Muffins

1 1/2 Cups High Protein Buttermilk Pancake Mix, I use Kodiak
1 tsp baking soda
1 tsp ground ginger
1/4 cup unsweet vanilla almond milk or use regular unsweet almond milk
1/4 cup monkfruit sweetener, I use Lakanto
1/4 cup unsweet applesauce
1/4 cup water
1 large egg
1 tsp vanilla extract
Zest from 1 large orange about a tsp and 1/4 cup of juice
6 chopped dates, I used Trader Joe’s Pitted Medjool dates

Preheat oven 350, grease or line 9 cavities in a muffin tin

Combine pancake mix, soda, ginger in a smallish bowl

Whisk together, egg, sweetener, applesauce, water ,milk, zest & orange juice, then whisk in vanilla, add in chopped dates reserve some to sprinkle on top. Add pancake mixture and stir to combine.

Fill each well with 1/4 cup of batter, sprinkle dates over top. Optional: Sprinkle sweetener over the bits of dates.

Bake 20-25 minutes, I did 25 , they were a little dark around edges.
