This part skim mozzarella spinach stuffed mushrooms recipe has been a game changer-these are one weight watchers point each!

Makes 10 servings each is one point on weight watchers

Keep reading for the delish deets

Ingredients
Mushrooms I used white
10 Stems off mushrooms
1 large Vidalia onion
1 cup spinach 
1/2 cup vegetable broth 
1/2 cup fat free mozzarella cheese
1/2 cup stewed canned tomatoes  
garlic powder

Instructions

Preheat oven to 350

Destem mushrooms
Chop up onion and mushroom stems
Sautee onion, spinach in vegetable broth for about 6 minutes, add mushrooms for 4 more minutes. Keep just enough broth on until it evaporates then add more immediately. I add tons of spices here like onion/garlic powder, whatever you like.

stuff each mushroom with a spoon of the tomato, spinach mixture and drizzle mozzarella cheese on top.

bake on cookie sheet sprayed with cooking spray at 350 for about 15 minutes.

it’s absolutely delicious and filling.
