Perfect pumpkin muffins recipe

Light and fluffy, our perfect pumpkin muffins recipe uses applesauce instead of oil. Use either a soup ladle or an ice cream scoop to make the muffins an equal size.

These muffins are just 1 weight watchers point each! To keep the heat evenly distributed in the muffin tin, if you have any unfilled muffin cups, add water to them.
We use both cooking spray and muffin wrappers to prevent any batter from sticking to the top of the pan but you can use a nonstick pan instead, if you prefer. You can also freeze the muffins to have on-hand for a quick breakfast or snack.

- 15½ oz Libby’s 100% Pure pumpkin
- 1½ cup Kodiak Cakes Buttermilk flapjack & waffle mix
- ½ cup unsweetened applesauce
- 2 eggs
- 1 tsp baking soda
- 1½ tsp ground cinnamon
- ½ tsp ground ginger
- ½ tsp ground nutmeg
- Ground nutmeg
- ¾ cup Swerve The Ultimate Sugar Replacement, Granular

Instructions
- 1 bake at 350 for 15-20 min
