Protein oatmeal bake

We use a cinnamon roll–flavored drink to add protein as well as to provide sweetness and spice to this easy, make-ahead breakfast. With eggs and Greek yogurt, the baked mixture becomes wonderfully creamy. You can make this ahead of time, cut it into squares, and refrigerate for quick breakfasts later in the week; microwave on high for about 1 minute to reheat.

We like a combination of berries, but feel free to stick with one type if you prefer.

Ingredients

  • Cooking spray
  • 1½ cups Premier Protein Cinnamon Roll Protein Shake
  • 1 cup Plain fat free Greek yogurt
  • 3 large eggs
  • 2 cups uncooked old fashioned rolled oats
  • 1 tsp Baking powder
  • 1 cup Strawberries, quartered
  • 1 cup Raspberries
  • ½ cup Blueberries

Check out my Weight Watchers shopping list here.

Instructions

  • Preheat the oven to 350°F. Coat an 8-inch square baking dish with cooking spray.
  • In a large bowl, whisk together the protein drink, yogurt, and eggs.
  • Stir in the oats and baking powder. Pour the mixture into the prepared baking dish. Bake until lightly browned and set, about 30 minutes.
  • In a medium bowl, combine the strawberries, raspberries, and blueberries. Cut the oat mixture into 4 equal pieces; serve with the berries.

Serving size: 1 piece of baked oatmeal and ⅔ cup berries
