Protein Packed Pumpkin Spice muffins

These one weight watchers point Protein Packed Pumpkin Spice muffins are easy, delicious and feature all of our favorite flavors of fall: ground cinnamon, canned pumpkin purée, pumpkin pie spice.

They all come together in one fantastic, spice-forward, hearty muffin in a taste combination that you’ll find irresistible.

All you need to do is combine the wet and dry ingredients together to make the batter, no electric mixers or other fancy equipment required.

Divide the batter among muffin cups, let them bake in the oven, and these sweet treats are ready to go. They’re so satisfying and fun to make, you may find yourself reaching for this recipe all year-round.

Ingredients

  • 3 eggs
  • 1 cup (about a half 15-ounce can) of pumpkin puree
  • ¾ cup water
  • ¾ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • 1⅓ cups dry mix Kodiak Cakes Power Cakes Whole Grain Buttermilk Flapjack & Waffle Mix
  • 2¼ tsp monkfruit sweetener with erythritol
  • 1½ teaspoon pumpkin pie spice (we like this one)

Instructions

  • Preheat oven to 350°F.
  • Line or grease the cups of a 12-cup muffin pan. We prefer nonstick, easy-to-clean versions like the one shown below.
  • In a medium bowl, whisk together the eggs, pumpkin, water, vanilla, pumpkin pie spice and cinnamon. Stir in the baking mix and monkfruit sweetener just until combined.
  • Divide the batter among muffin pan cups.
  • Bake 15 to 20 minutes, until a toothpick inserted into the center comes out clean. Let cool on a wire rack.
  • Refrigerate for up to 1 week.
