I do not cook. There, I said it, and yet I still feel just a bit of shame.  I’m not one of those mothers and wives who devours the latest cookbook and I am NOTHING like my husband.  He was, in fact, the inspiration for this Vegan Oatmeal Raisin Cookie Recipe!  I know you will love these as much as I do, and maybe your husband will whip a batch up for you too!

Vegan Oatmeal Raisin Cookie Recipe

The truth is, I think I simply lack that gene; the one that should be sending me impulses to prepare the very sustenance of life for my kids and husband.  So, this Vegan Oatmeal Raisin Cookie Recipe is one that my husband is really the creator of for the blog.  It is simple enough I should be able to make it, so I know you will love it just as much as I did!

Ingredients for Vegan Oatmeal Raisin Cookie Recipe

Below, you’ll see a few simple and common pantry supplies.  These ingredients are probably already in your kitchen, so no need to go shopping!  Grab them and whip up a simple batch of this yummy Weight Watchers friendly cookie recipe in minutes!
  • 3 large ripe bananas
  • 1/3 cup unsweetened applesauce
  • 2 cups uncooked old fashioned oats
  • 1/4 cup plain unsweetened almond milk
  • 1/4 cup raisins
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Nonstick Cooking Spray

Directions for Vegan Oatmeal Raisin Cookies

Below are the directions for this simple recipe for vegan oatmeal raisin cookies.

In a large mixing bowl, mash three ripe bananas

Measure and add in your uncooked old fashioned oats

Combine the oats and banana well, before adding in your almond milk and applesauce

Stir in the cinnamon, vanilla, and raisins until well combined.

Spray your cookie sheet or baking pan with non-stick cooking spray

Scoop out 12 equal portions of cookie onto the prepared pan (I use an ice cream scoop or melon baller for this)

Bake at 350 degrees for 20 minutes or until the desired doneness you prefer

Makes 12 cookies

    This is exactly the same method we have at my house! Adding in my husband’s food allergies and stronger desire to keep Kosher, it just makes sense that he does all the cooking. When he’s away, we’re more likely to order in or eat something simple because all of the cleaning responsibilities throughout the house still fall to me. And while I could cook if I really had to, if he didn’t do it, it would feel like every daily responsibility had been put on my shoulders. With both of us working full time and two small children, I can’t do it all alone. Glad to hear it’s working for you too!

    I never liked cooking until I got married ha ha. In fact when my husband proposed to me I said “But ” don’t cook!” His response was “There’s so many restaurants out there!” I eventually learned how to love cooking though.

    I just made the same cookies yesterday but without applesauce. Yum!
