Let's be honest there is nothing like a good serving of quiche. And this Savory Spinach quiche has everything you want -veggies and protein and yes potatoes!!

Savory Spinach Quiche
Ingredients
5oz Trader Joe's Teeny tiny potatoes

8item(s), large Egg(s)18 personal points
1cup(s) Fresh baby spinach 0 personal points
2 Tbsp Parmesan cheese 1 personal points
1⁄3cup Part-skim mozzarella cheese
shredded 4 personal points
4cup(s) Cooked zucchini 0 personal points
Directions
Sprayed the bottom of the pan & add my sliced up 5 ounces of tiny potatoes. Mixed up 8 eggs, spinach, grated zucchini, 2 tbsp of Parm, 1/3 cup of mozz and then poured it on top. Sprinkled 1/4 of mozz on top and baked at 350 for 35-40 minutes.
Each slice is 4 points for me on my personal points plan! This would also be perfect for whole 30 just omit the cheese!
