Small Batch Brownie Crumble Cake
Ingredients
- 50 grams of flour (1/4 cup plus 3 tbsp)
- 15 grams of unsweetened cocoa powder (3 tbsp)
- ½ tsp baking powder and of baking soda
- ¼ tsp salt
- 2 tbsp unsweetened applesauce
- 3 tbsp of zero calorie sweetener
- 1 large egg
- ¼ cup of boiling water
- 2 – 70 calorie high fiber brownies, chopped into chunks. I used Fiber One
Instructions
- Preheat oven to 350 degrees, grease 6” cake pan
- Whisk together, sweetener, egg, applesauce
- Sprinkle in cocoa, powder, soda and salt, whisk until combined
- Sprinkle in flour and whisk, pour in boiling water and whisk until smooth
- Add about 2/3rds of the chopped brownie
- Pour into prepared pan
- Sprinkle remaining brownie bits over top
- Bake 18-21 minutes. Toothpick check center at 18 minutes if it comes out clean, it’s done, if not bake for another 3 minutes, toothpick check again
- Remove from pan after about 3 minutes, allow to cool on a wire rack.
