Small Batch Lemon Glaze Donuts
½ Cup of Self Rising flour, I use Gold Medal
1/8 cup of Sweetener, I use Monkfruit
¼ cup of unsweetened applesauce
1 large egg
1 tsp of lemon zest
1 tsp of fresh lemon juice
Preheat oven 350 degrees, grease 4 cavities in a donut pan
Whisk together all ingredients except flour , stir in flour. Add ¼ cup of batter to each donut well.
Bake 15 minutes. Let cool 5 minutes, release from pan.
Glaze: Mix together in a wide mouth bowl
½ cup packed powdered sweetener
5 tsp of fresh squeezed lemon juice.
The warmer the donut the thinner the glaze, dip all warm donuts once, then do again when first layer has cooled slightly.
