Snickerdoodle Muffins

Snickerdoodle Muffins

When https://instagram.com/wwjourney_kiki ​indulges in late night baking it Just means we get to try out out her recipes! Her delicious Skinny Snickerdoodle bananamuffins will be my breakfast.

 They’re -80–130 cals each depending on ingredients used below.

Ingredients:

·5 mashed bananas 

•1 teaspoon vanilla extract

·1 egg or unsweetened applesauce

·3 Teaspoon brown sugar

•2 Teaspoon  Lakanto Monkfruit (but any granulated sub will-work)

· 2 tsp Cinnamon Toast Crunch Cinnadust Seasoning Blend (I get at Samsclub)

·1 tsp Baking soda

·1 tsp Baking powder

•2 tsp Cinnamon

·1 1/2  cup flour

·2 Tablespoon melted I Can’t Believe It’s Not Butter! Light vegetable spread (added at the end)

Instructions 

-Preheat oven to 350. Prepare muffin pan with liners. (I personally like foil).

-Mix mashed bananas,vanilla, egg &

both sugars together just until blended.

-In separate bowl mix dry ingredients and then slowly incorporate them into banana mixture just until blended.

Don’t over-stir.

-Once both mixes are combined, add melted butter and stir to incorporate.

-Put spoonfuls of mix into prepared muffin pan. I sprinkled each with more Cinnamon Toast Crunch cinnamon sugar on top before  and after baking but you can also just  make your own or leave out.

Bake 15–18min & wa-lah! Makes 12 muffins -each muffin is two points each!
