Strawberry banana bread

This strawberry banana bread is so good and surprisingly easy to make. It’s an easy treat when paired with coffee or a scrumptious after-dinner dessert that will have your guests begging for the recipe.

Note: I adapted the original recipe to make it more ww friendly. The recipe said to use a mixer but I just mixed it all by hand.

Ingredients
- 2 large eggs
- 3.5 to 4 medium ripe bananas (or 3 large)
- 1 tsp baking soda
- ½ tsp table salt
- 1½ cups fresh sliced strawberries (or frozen if that’s all you can find)
- 1 cup Stevia granulated zero-calorie sweetener
- ½ cup unsweetened apple sauce
- 2 cups all-purpose flour

Instructions
1 Preheat oven to 375 degrees Fahrenheit.
2 Spray two 9 x 5 loaf pans with non-stick cooking spray.
3 Add Applesauce and 1 cup sweetener to a large bowl.
4 Mix together until light and fluffy.
5 In a small bowl, beat 2 large eggs using a fork.
6 Add the eggs to the sugar mixture and mix until combined.
7 Add 3 ripe mashed bananas to the sugar mixture and mix until combined.
8 Sift together 2 cups flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
9 Slowly add the sifted flour ingredients to the banana mixture and mix until flour is just combined.
10 Toss 1.5 cups chopped strawberries, with 1 tablespoon flour.
11 Fold the floured-covered strawberries into the batter.
12 Divide and pour the batter into the prepared loaf pans.
13 Bake in the preheated oven for 15 minutes.
REDUCE the heat to 350 degrees Fahrenheit and bake for an additional 30 minutes.
