Strawberry Breakfast Custard because breakfast doesn’t have to be boring! 🍓

I had a bunch of strawberries in the refrigerator that needed to be used.
So this morning I decided to experiment with a light, Weight Watchers-friendly breakfast custard.
No butter. No heavy cream. No crust. Just strawberries, eggs, protein, and a whole lot of flavor.
🍓🍳 A fun, light breakfast that feels a little like you’re getting away with eating dessert first thing in the morning! 😋
Makes four servings each serving is one point. We put fiber one on top of it.
And this one is definitely going into the rotation!

Ingredients
🍓 1½–2 cups sliced fresh strawberries
🥚 2 whole eggs
🥚 ½ cup egg whites
🥣 ½ cup nonfat Greek yogurt OR blended nonfat cottage cheese
🌿 1 teaspoon vanilla
✨ Artificial sweetener to taste
🧂 Tiny pinch of salt
instructions
Whisk or blend the eggs, egg whites, yogurt (or cottage cheese), vanilla, sweetener, and salt until nice and smooth. Put the sliced strawberries in a small baking dish, pour the custard mixture over them, and bake at 350°F for about 30–40 minutes, until the center is just set.
Let it rest for a few minutes and top it with a few fresh strawberries.
I used nonfat Greek yogurt because that’s what I had in the refrigerator, but I think blended cottage cheese would also be fantastic and give it almost a strawberry-cheesecake flavor.
