Scrumptious Strawberry Ice Cream Cake

Strawberry Ice Cream Cake
1 1/2 cups of Sugar Free Yellow Cake Mix
1 egg
1/2 cup of water
1/4 cup of Unsweetened Applesauce
1 Pint (2 cups) of Lite Ice Cream, I used Nick’s Strawberry but Halo Top or any low point ice cream will work
Preheat oven 325 degrees, grease 2 9×5 loaf pans. Mix until smooth all ingredients except ice cream. Separate batter into 2 loaf pans, about a 3/4 cup each bake 18-20 minutes. Let cool 5 minutes remove from pan and place on baking sheet to cool in the fridge, about 20 minutes. Take your pint of ice cream out of the freezer to get soft.
Line 1 of the 9×5 loaf pans with tin foil, make sure the foil is hanging over all sides, place 1 cake in the bottom. Transfer your ice cream to a bowl and stir, mix, smash until soft serve consistency, spread over bottom cake, place 2nd cake on top.
Freeze for at least 3 hrs. before serving. Store in freezer 🙂
