Ingredients:
4 Tbsp of a melted butter spread, like Smart Balance Lite
2/3 cup of Self Rising Flour
Β½ cup of Sweetener, I use Monkfruit White
Β½ tsp of Vanilla Extract
4 Tbsp of Fresh squeezed lemon juice
2 Eggs
Zest from 1 Lemon
3Tbsp of Powdered Sugar mixed with 1 1/2tsp of water or for more lemon flavor use lemon juice instead of water.
Directions:
Preheat oven 325 degrees, grease an 8×8 brownie pan
Whisk in a medium bowl, the melted butter, eggs, vanilla, sugar, lemon juice & zest. Add flour, mix until smooth, pour into greased pan, bake 15 minutes.
Remove from oven and let sit in pan until pan has cooled, then place in fridge for 30 minutes or until cold to the touch, remove from pan drizzle your powdered sugar mixture over top.
Due to the glaze store in the same pan in the fridge.
