Tortilla and Quiche Bake

My Tortilla Quiche Bake is an easy breakfast or lunch!  It was so good and only 5 Weight Watchers points for the whole recipe. Cut the entire thing into 5 servings for 1 point each.

Tortilla Quiche Bake

Definitely making this again! It’s as simple as arranging a tortilla in a pan, cracking in a few eggs and the rest of the ingredients.

After a few minutes in the oven, you end up with a delicious tart with quiche-like vibes—and very little cleanup since you don’t have to mix anything together. Make sure you use a pan that is slightly too small for the tortilla, so that the edges will bend upward to create a crust that holds in the eggs.

Ingredients

  • 1 8″ low carb flour tortilla
  • 3 eggs
  • 1 cup fresh spinach
  • 1 cup sliced mushrooms
  • 1/2 cup fat-free cottage cheese
  • 1/4 cup shredded, reduced fat Mexican-style cheese blend

Instructions

  1. Preheat the oven to 375°F. Coat one side of the tortilla with cooking spray.
  2. Arrange the tortilla, coated side down, in a dish that’s slightly too small for it and makes the edges tilt up (a tapered pie plate works well).
  3. Mix  eggs cottage cheese  and veggies. pour onto the tortilla, Sprinkle evenly with the cheese. Bake 12 to 15 minutes. Remove from the pan; cut into 5 wedges.

Serving size: 1 wedge
