My Tortilla Quiche Bake is an easy breakfast or lunch! It was so good and only 5 Weight Watchers points for the whole recipe. Cut the entire thing into 5 servings for 1 point each.

Definitely making this again! It’s as simple as arranging a tortilla in a pan, cracking in a few eggs and the rest of the ingredients.
After a few minutes in the oven, you end up with a delicious tart with quiche-like vibes—and very little cleanup since you don’t have to mix anything together. Make sure you use a pan that is slightly too small for the tortilla, so that the edges will bend upward to create a crust that holds in the eggs.

Ingredients
- 1 8″ low carb flour tortilla
- 3 eggs
- 1 cup fresh spinach
- 1 cup sliced mushrooms
- 1/2 cup fat-free cottage cheese
- 1/4 cup shredded, reduced fat Mexican-style cheese blend
Instructions
- Preheat the oven to 375°F. Coat one side of the tortilla with cooking spray.
- Arrange the tortilla, coated side down, in a dish that’s slightly too small for it and makes the edges tilt up (a tapered pie plate works well).
- Mix eggs cottage cheese and veggies. pour onto the tortilla, Sprinkle evenly with the cheese. Bake 12 to 15 minutes. Remove from the pan; cut into 5 wedges.
Serving size: 1 wedge
