Vanilla Pudding Pie

What could be better than vanilla pudding pie with strawberries? what about if it was just one point per slice! Thanks to Susan for sharing her recipe with us that she modeled after the Holy Mess!

It is so easy to prepare and just one point per serving! the recipe makes five servings! keep reading for this easy recipe!

vanilla pudding pie with strawberries

Ingredients
3 item eggs
3 T Splenda, Stevia, or Monk Fruit powder optional
1 T vanilla extract
3 cups plain, non-fat Greek yogurt 1 large carton
1 box sugar-free pudding mix vanilla flavor

fresh or frozen strawberries 

Instructions
Pre-heat oven to 350 degrees. Spray pie dish with cooking spray and set aside.
In a large mixing bowl, add eggs, vanilla, and sweetener and beat with electric mixer until blended.
Add yogurt and pudding mix and beat until creamy and smooth.
Pour mixture into prepared pie dish.
Bake for 30 minutes or until firm throughout and set in the middle.
Allow to cool. Then cover with plastic wrap and place in the fridge for at least 3 hours or overnight. Top with strawberries when ready to serve! 

Notes

This pudding pie is 1 point per slice or 5 points for the whole pie.
