Air Fryer vegan crab cakes ( aka Jackfruit Cakes) 

Vegan Crab Cakes

Thank you to @healthykel_  for sharing her creations! I found her account on instagram and I knew I needed to share her recipes with all of you! 

According to @healthykel_ she has been so inspired by all the new vegan items at Trader Joe’s (especially the vegan dill dressing) and has always wanted to try and make jackfruit cakes.

The canned jackfruit from Trader Joe’s makes this recipe so easy (& so much cheaper than actual crab). She loves having crab cakes for a meal and these just made that so much easier

The review: they are allllmost as good as crab cakes. I’ll take that as a huge win!

Air fryer Vegan Crab Cakes

dEATS🦀
makes 7 cakes
What you’ll need:

•1 can of jackfruit
•3/4 cup panko
•1/4 cup vegan mayo
•3 green onions
•1/4 cup cilantro
•juice 1/2 lemon
•1 tsp paprika
•1 tsp garlic powder
•salt and pepper, to taste

How to make them:
•in food processor, chop green onion and cilantro. Drain and rinse jackfruit and add to food processor. Pulse a few times to break up the jackfruit
•in a bowl, combine the jackfruit mixture with remaining ingredients and mix well
•using 1/4 cup, form the jackfruit cakes
•air fry at 400, 5 minutes on each side
•serve with dill dressing (or tarter sauce)
•enjoy!
