Vegan Taco Soup is a Quick and Easy Back-to-School Dinner

I know we will soon be on holiday break and yet I already have back to school on the brain ( hence this post Vegan Taco Soup ).

While I am savor these fleeting weeks of winter vacation and unstructured dinner times, I know that soon enough my kid will be in the car driving home from a long day of school and I’ll get peppered with the following questions/complaints.

 Vegan Taco Soup is a Quick and Easy Back-to-School Dinner

“Mommy what’s for dinner tonight?”

Me: ” Daddy made lasagna.”

“But we had lasagna last night, I am so sick of lasagna, what kind of lasagna is it?”

Me: “He made the Lasagna soup  you love.”

“No mommy I can’t eat mac and cheese again this week, isn’t there anything else you can make?”

Which brings me to January 2nd- and the cold, hard realization that my husband and I need to have some kind of Back-to-school dinner menu planned. We need to have an arsenal of recipes we can rely on and pull out when Lasgna Soup just won’t do!

The good news is this recipe for Vegan Taco Soup  which is a Quick and Easy Back-to-School Dinner your kids won’t balk at ( I’ve already reviewed it with my kids and they have pre-approved it!)

Vegan Taco Soup is ZERO points per serving on Weight Watchers 

 Vegan Taco Soup is a Quick and Easy Back-to-School Dinner

 

 Ingredients:

 Vegan Taco Soup is a Quick and Easy Back-to-School Dinner
 
1 bag meatless crumbles
2 cups veggie broth
1 can of diced tomatoes (I used ro-tel with habaneros)
1 can of corn
2 tbs taco seasoning
1 jalapeno, sliced
optional: top with fat-free or non-dairy cheese

Vegan Taco Soup Directions:

Combine all ingredients in slow cooker. Cook on low for 2-4 hours. Soup is ready after about 2 hours, but can stay on for up to 4 hours.

Technically, the meatless crumbles are 1 point for 1 cup and taco seasoning does have points, but this soup makes 8 servings and uses less than 2 cups for the whole recipe (and such a small amount of seasoning), so the points would be like 1/4 point per serving. If you eat the whole thing it’s going to be more like 2 or 3 points.
 

Every kid loves a good bowl of soup and this Vegan Taco Soup is a Quick and Easy Back-to-School Dinner and one that the entire family will want to slurp on.

    I love the weight watchers taco soup. I know many people make it with ground turkey, but I like using rotisserie chicken.

    I love a good taco soup. I’ll be making this during the winter for sure. We love soups when it’s cold out. They’re so comforting.

    This looks so amazing. I have never actually had taco soup before. I’ve always wanted to try it though. Looks like I’ll have to make this soon!

    This will be perfect because I cook for a pescatarian but the others in the house are meat eaters so I’ll just do half with meat and half with the crumbles.
