Weight Watchers Cheesy Zucchini Fritters Recipe

Did your mom or grandma ever make potato pancakes out of leftover mashed potatoes when you were a kid?  Mashed potatoes are a little challenging to heat up the second day so my grandma would turn them into Italian style potato pancakes. After all, they were already brimming with butter and cream and everything in between! Who could let that go to waste?

She would add an egg or two, some onion and garlic powder, maybe a little basil and a mound of parmigiano!  Then she would cover the bottom of a skillet with lots of wonderful Olive Oil and fry them up into the most delicious little pancakes of potato perfection!

Yes, well, as delicious as that may sound, the WW points on that would be just a bit hefty for most of us on a diet lifestyle journey, as  truly satisfying as it may be!  But I didn’t tell you all that just to disappoint you or make you hungry!

So, along those lines I have created a similar tasting little fritter that will give you the creaminess on the inside and the crispiness on the outside — just like a potato pancake but much lower in WW smartpoints.

Watchers Cheesy Zucchini Fritters Recipe

This dish would also be great as a vegetarian dish with the points coming in at 2 for a serving of 3 on WW Blue and Purple and 4 on WW green. You could make six little fritters and a dollup of light sour cream and have yourself a meal.  These fritters also freeze well and last up to 1 month in the freezer.  I like to make 10 or 20 ahead of a brunch for my family and freeze them.

On the day of the brunch you can just take them out and crisp them up in an Air Fryer. If you don’t have an air fryer, you can reheat with a convection oven, toaster oven or even reheat them in the skillet. They make for an impressive dish that is a bit unexpected for the guests!

Weight Watchers Cheesy Zucchini Fritters Recipe

A WW Comfort Food Recipe Blog Weight Watchers Cheesy Zucchini Fritters

Weight Watchers Cheesy Zucchini Fritters

Ingredients:

Zucchini

1 whole large egg

1 Tbsp Onion Powder

1 Tbsp Garlic Powder

½ tsp salt and pepper

1 ounce Fat Free or low fat Cream Cheese

2 Tbsp Parmesan

Directions:

Spiralize 2 medium sized Zucchini, enough for one cup.  You can also buy the pre spiralized version at the store.

Put Zucchini in a cheese cloth or a paper towel if you don’t have one and squeeze all the water out.  Do this a couple of times until the zucchini stops draining water.

In a food processor, Combine the following ingredients and blend until fairly smooth but very thick. 

Once blender drop a dollup, I like to use an ice cream scoop, onto a hot pan with some olive oil.

Sear until golden brown on both sides flipping once. Serve!

Serving size is 3 fritters and this recipe will make 6 Weight Watchers Cheesy Zucchini fritters.

On Weight Watchers Blue and Purple plans each serving is 2 points

On Weight Watchers Green plan each serving is 3 points
