These Weight Watchers Chocolate Peanut Butter Muffins have a SECRET ingredient. You will never guess! Shredded zucchini! YES! so not only are they delicious but they are healthy for you too!
I love the fact that they have a peanut butter center too made entirely of good old peanut butter powder. ANd did I mention that they are REGULAR sized?! No mini muffins here- just hearty fill your belly Weight watchers Chocolate Peanut Butter Muffins.
What I like about these muffins is that they are not super sweet. So you don’t have this need to binge eat all of them. One muffin is filling and just the right amount of chocolate and peanut butter flavor.

Weight Watchers Chocolate Peanut Butter Muffins
Weight Watchers Chocolate Peanut Butter Muffins – Just three points each Serves: 12

Ingredients:
2 cups Kodiak Cakes Power Cakes Protein packed whole grain buttermilk flapjack and waffle mix 19 Points
1 1⁄2 tsp baking soda 0 Points
1 1⁄2 tsp baking powder 0 Points
1⁄2 tsp table salt 0 Points
1⁄2 cup(s) unsweetened applesauce 0 Points
2 medium banana(s) 0 Points
9 oz Stevia In the Raw Sweetener, Zero Calorie, Granulated 8 Points
2 cup(s) uncooked zucchini 0 Points
2 tsp vanilla extract 1 Points
1⁄2 cup(s) unsweetened cocoa powder 3 Points
8 Tbsp PB2 Powdered peanut butter 5 Points
5 spray(s)cooking spray 0 Points
6 Tbsp water
Directions:
Preheat oven to 350 degrees. spray 16 muffin tins with non stick cooking spray and set aside.
In a medium size bowl mix the kodiak mix, baking soda, baking powder and salt together;set aside.
In a large bowl mix together the applesauce, mashed bananas and sugar substitute. add the zucchini, vanilla extract & cocoa powder. mix together until well blended.
Add the kodiak mixture and mix together. (your batter will be thick)
Spoon the entire mixture evenly into 12 prepared cupcake tins.
In another small bowl mix the peanut butter powder with the water, Adding a tbsp of water at a time until you get a nice creamy consistency.
Spoon peanut butter mixture into the middle of each muffin.
Bake at 350 degrees for about 20 to 25 minutes or until a toothpick inserted in the middle of a muffin comes out clean.
