Weight Watchers Green One Point Apple Cinnamon Muffins

One of the best parts of being a Weight Watchers member is connecting with other members who are on the plan and getting recipe ideas and their tips!

So of course I was thrilled when she graciously allowed me to share her recipe which looks as good as it tastes! How great is it that we can all enjoy muffins on the Weight Watchers plan! This recipe is for those of you on green! Keep reading for all the details!

Thank you drizzlemeskinny for this Muffins recipe which was the base for adapting this Weight Watchers green recipe by using real eggbeaters and sukrin usa brown sugar to get this muffin down to 1SP 

Yup…ONE for a full-size muffin.

Using the WW silicone muffin cups,  italianwifey  got 11 muffins out of her recipe instead of 10.

This muffin is delicious warm and the bits of diced apples really give it a nice texture.

Weight Watchers Green One Point Apple Cinnamon Muffins

Ingredients:

1/2 cup (2 egg equivalent) Egg Beaters real egg product 1 point
3/4 cups Oikps Plain nonfat Greek yogurt 2 points
1/3 cup Unsweeneted apple sauce 0 points
1 tsp Vanilla Extract 0 points
1 1/2 tsp Baking powder 0 points
1 tsp Ground Cinnamon 0 points
1 large peeled and diced apple 0 points
1 cup Gold Medal self rising flour 11 points
6 tsp Sukrin Gold Brown Sugar 0 points

Directions:

1. Preheat oven to 350 F and spray 11 muffin cups with cooking spray.
2. Mix the eggbeaters and sukrin together. Stir in the applesuace, yogurt and vanilla. Mix in the remaining ingredients except apples. Mix well fold in apples.
3. Equally distribute batter between 11 muffin cups and sprinkle with extra Sukrin? Cinnamon mix. Bake 25 minutes.

    I didnt like these at all but hate to throw then away…the texture was actually good but the taste was not. If you dont like a sweet muffin at all then it would be ok. No sweetness at all and i use a honeycrisp apple.
