Why is Weight Watchers so gosh darn special you ask? Well it’s because I have never stuck to anything– except for my marriage and religion. Those are pretty much the only two constants that I’ve managed to hold firm to for the last 19 years of my life on this planet. And after trying this Weight Watchers Lemon Pound Cake I am pretty sure both I and Oprah will convince you to join us on our journey to being healthier and STILL eating the foods we love! And the truth is, despite my lack of cooking skills, my daughter’s been asking me recently if we can start baking together. So, I’m slowly inching my way back into the kitchen and we’ve actually prepared some tasty meals together.
The best part about cooking with my daughter and son is that while we’re working together, measuring out condiments, we manage to have the best conversations talking about things I’d usually have to beg her to share with me.
I am the first to admit it: Before I got married, my idea of preparing a meal was heating up Chinese take-out food in the microwave. Eventually, at the behest of my newlywed husband who wanted a “home-cooked meal on the table every night,” I tried my hand at cooking pasta. My fatal flaw was that while the pasta was boiling in the pot, I took a shower and conveniently forgot about it until the smoke alarm went off and a mini fire erupted in the kitchen. Suffice it to say, I am not one of those moms who can whip up vegetable baked ziti but…I can whip up this Weight Watchers Lemon Pound Cake.
Weight Watchers Lemon Pound Cake Ingredients
1 sugar-free lemon cake mix
1 small package sugar free lemon pudding mix
4 eggs
¾ cup nonfat Greek yogurt
¾ cup lemon juice
¼ cup water
2 Tablespoons lemon juice
1 cup Swerve powdered sugar
18 servings = 3 SmartPoints each
12 servings = 5 SmartPoints each
Instructions
Preheat oven to 350*F. Spray the inside of the cake or bundt pan with Pam or other 0 point spray.
Combine cake mix, pudding mix, eggs, yogurt, 3/4 cup lemon juice and ¼ cup water. Whisk until combined. Do not overbeat.
Pour batter into cake pan and bake according to cake package instructions.
Combine powdered sugar, and 2 Tablespoons lemon juice. Stir until all ingredients are combined. Use remaining lemon juice to bring to a consistency that will allow you to drizzle the glaze over the cooled cake. After the cake has cooled, drizzle the glaze over the cake.
So the real question…did I drop any poundage during this challenge? the answer is YES. How many pounds you ask? I did drop three pounds- three hard won, hard fought pounds– and more than the poundage- I feel better. I have made this recipe 4 times so far! lol it is my “go-to” when I need to bring something to parties! Everyone loves it ! The only thing is I can’t get my icing to look like that. I can’t get my icing to “show up” at all. I let my cake completely cool. But, it just soaks into my cake and “disappears”. We can still taste it and it tastes fabulous! but, just wondering it there is a trick to getting the ‘icing’ look. Know what I mean?

Nope never found it myself, just used yellow cake, with lemon extract, zest & juice to get that lemon flavor.

I made this for a group gathering and it was delicious. It got scoffed up quickly. Used a regular lemon cake mix but kept all the other ingredients the same. Calculated 2 points. 21 for cake mix 3 for pudding. 24 divided by. 12. Sooo good

I made this tonight and the boxed Duncan Hines Lemon Supreme Cake Mix is 84 points by itself. Three grocery stores and not one had a sugar free cake mix. I served 20 and it came to 4 freestyle smart points per slice. Nice size slices. Made in a bundt pan.

I made this yesterday and it turned out great. Very dense and moist and more like pound cake, which I love. Very strong lemon flavor as well, which is how lemony things should be. I could not find sf lemon cake mix, so I used regular lemon cake mix and sf instant lemon pudding. I did not make the glaze and it’s great without it. Thank you for a great recipe.
There is no such thing as sugar free lemon cake mix. Also, the info on Pinterest is incorrect, it’s NOT a zero point cake, unless you bake it, and not eat it.
