- 9 medium clove(s)garlic clove(s) 0 Points
- 14 oz canned cannellini beans 0 Points
- 14 oz canned butter beans 0 Points
- 14 oz ShopRite Kidney Beans, Dark Red 0 Points
- 14 oz ShopRite Chick peas, garbanzos 0 Points
- 2 cup(s) uncooked bow tie pasta 12 Points
- 2 Tbsp olive oil 8 Points
- 1 Tbsp fresh parsley 0 Points
- 1 pinch table salt 0 Points
- 1 pinch black pepper 0 Points
- 2 cup(s)fat free reduced sodium vegetable broth 1 Points
Directions: Weight Watchers Minestrone Soup Recipe- Just two Smart Point per serving
- Saute onion, garlic in the olive oil for four to five minutes on medium heat until onion begins to soften.
- Add crushed tomatoes, tomato sauce and 2 cups of veggie broth
- Rinse off canned beans in a colander then add to the simmering pot for twenty minutes.
- While the soup simmers bring a separate pot of salted water to a boil and cook the two cups of bowtie pasta until al dente.
- Then add pasta to the beans and sauce mixture stirring on low heat
- Add salt, pepper and serve.
